I went to college at the University of Denver and received a bachelor of science degree and business administration with a major in hotel and restaurant management.
What was your first restaurant job?
I worked for John R. Thompson restaurant chain.
How long have you been a chef?
Forty-three years.
Where do you eat out on the island?
I usually enjoy going out for pizza. (Café) Bubbalini.
Do you cook at home? If so, what do you cook for your family?
Yes. I do a lot of smoking and barbecuing.
What's your favorite meal?
Barbecued ribs.
What's your specialty? Why?
I'm usually best at home-style cooking. I've done a lot of it; things like chicken dumplings which is something that takes a while to cook instead of just opening a box.
What's your favorite ingredient?
Garlic.
What's your restaurant's biggest challenge?
It's always been staying consistent and maintaining our reputation. We've been here 21 years and a lot of restaurants have come and gone.
What's your most popular dish?
Seafood strudel.
What is it that you like the most about your profession?
I'm my own boss.
