On the Menu: It’s not your mama at Nacho Mama’s but she does look like Paris Hilton

At Nacho Mama’s your mama might not be serving or making the meals, but once aboard at this island oasis, anything can happen when special staffers approach and old world Mexico takes on a new Tex-Mex edge.

The ambience at Nacho Mama’s is quite simply Aztec chic and new millennium, comfort with an island-style feel and a special touch of European hospitality. The little “Cantina that Can,” in the Marco Walk is really a sensation especially with the Baja Fish Tacos, a maître d’ manager extraordinaire and a fun-loving staff that are clearly happy in their work.

With August upon us, and the sultry summer sun headed south once again, the culinary adventuress and I were welcomed into the delicious realm of Dirk, Caitlin and Audrey Rose. At Nacho Mama’s the staff is really engaged, and there is a sense of pride and ownership with every action.

“Oh, my God!” Vicki Lynn commented, “You look just like Paris Hilton!”

“Yeah,” Audrey Rose smiled, “I get that a lot.”

“You really do,” Vicki insisted.

“That’s what they say.” Audrey smiled again as she presented Nacho Mama menus modeled after Aztec stone tablets.

Even before the menu selections could become tempting, “Paris,” aka Audrey Rose, delivered tricolor chips and salsa. With red-, blue- and pumpernickel-colored chips served with an obvious homemade fresh salsa, a sure starter awaits with every beginning at Nacho Mama’s.

At the “Cantina that Can,” inside and alfresco dining are choices that make this island getaway fun. For the insiders, there is a single pool table tucked in a corner, a stuffed animal crane claw game and plenty of inside air-conditioning seating in an atmosphere of old Aztec meets new age Mexican.

For our star-studded evening, we were outside in the evening air under a big umbrella with “Paris” serving frosty cervezas.

After master maître d’ Dirk Benedict dropped by to ensure everything was perfect in that classic European style, we had questions for Paris about the menu.”

“How are the Baja Fish Tacos?” I asked.

With a hand on her hip Paris answered, “Those are very good — everyone who tries them is very impressed.”

“What about the quesadillas?” Vicki Lynn queried.

“Oh,” Paris smiled, as if about to share a secret. “Those are great — that’s a real favorite.”

On her advice, dinner orders were done as we settled in with an additional appetizer of guacamole for the tricolor chips and homemade salsa.

When dinner arrived and after the first bite, Paris was vindicated! The Baja Fish tacos at Nacho Mama’s really prove that the “Cantina that Can” really does and when Vicki tasted her Chicken Quesadilla she nodded her approval as Paris studied our reactions.

The Baja Fish Tacos are served with a choice of refried or black beans, and yellow Mexican-style rice. The fish is a tasty white fish fillet that covers the entire platter with three soft flour tortillas waiting underneath. Served with blended and grated Mexican cheese, crisp lettuce and a very special sauce that compliments the fish and finishes the tacos brilliantly; this entrée really shines at the “Cantina that Can!”

Nacho Mama’s is open from 11 until 1 a.m. daily. There’s a mixed variety of entertainers each Thursday and Friday, and Tantrum plays every Saturday night. A “Not Your Mama’s” happy hour happens every day between 3 and 6 p.m., and again between 10 p.m. and midnight. Nacho Mama’s has full liquor service, a wine list to make northern California proud and a Little Jalapeno menu is available for children under 12, featuring hamburgers, hot dogs, wings, Mexican grilled cheese, Nacho’ Mama’s macaroni and cheese and several other items for only $4.99.

Nacho Mama’s is the honored recipient of the platinum plate winner for “Best Mexican Restaurant on Marco in 2001.” Located at 599 N. Collier Blvd. in Marco Walk, take out is available and Nacho’s signature Nacho Grande is the best nachos on the island. The staff at “Not Your Mama’s” challenge anyone to finish a true Grand Canyon of Nacho Grande!
