Those who likes Sushi can find an interesting spin on the fare at Cocomo’s Grill with a dish that owners Scott and Bonnie Gibbs created, called seared Ahi tuna nachos. There’s no cheese or guacamole on these nachos, but it’s just as colorful a dish.
“It’s like a sushi dish,” Gibbs said. “My wife says it should have sparklers or fireworks coming off of it when people order it.” Gibbs saw the dish done a similar way one other place, but always likes to put his own spin on things.
“We love variety,” Gibbs said. Wherever we go we try to create something from something else and put our spice on it – put our flair to it.”
The dish starts with sushi-grade Ahi tuna, rolled in cracked black pepper and sesame seeds. The cook then lightly sears the tuna before it’s sliced and cubed. The tuna is served over a seaweed salad and wonton chips with chopped ginger and scallions, and then drizzled with wasabi mayo and a sesame glaze. It’s served with an oriental dipping sauce that’s prepared from scratch in the kitchen, called sirracha, that Gibbs described as a spicy Thai sauce.
Patrons can order the dish as an appetizer to share or as an entrée for $13.99 during both lunch and dinner. The popularity of the dish has grown since it first found its place on the menu about two years ago. “We probably do about 15 to 20 a day. Once we started selling it, people starting talking. It’s just flown off the menu,” Gibbs said.
At first, it was titled just tuna nachos, but too many patrons thought the dish was tuna fish nachos and shied away from ordering it. That’s when Gibbs decided to make a bolder statement with the title by calling it what it really was: seared Ahi tuna nachos.
Brothers Tim and Bill Filbin both tried the seared Ahi tuna nachos during lunch at Cocomo’s Grill. “It was unbelievable. It was different. I never expected that,” Tim said. His brother agreed.
“I really liked it. I like it because it had a sweet and a spicy crossover to it. The presentation was really nice, too. It almost looked like a dessert,” Bill said.
