Here's this week's Happy Hour ... a conversation with Cindy Thomas of the Cove Yacht Club:

Experience: Tending bar at the Cove Yacht Club for almost 23 years.
What is the most popular drink at your bar? It is definitely our house drink, named Chickee Punch, followed by margaritas.
What is your drink of choice? I love wine.
Do you have a favorite bar besides this one? Harold’s Place and Campiello’s.
Do you have a favorite time of day? I love to watch the gorgeous sunsets from the bar.
What type of food do you serve at the bar? Wednesday is free hot dog night for our hotel guests and yacht club members. We usually have hot dogs, and in the winter we sometimes have chili. On St. Patrick’s Day I cook corned beef and cabbage. Saturdays are my choice and it is usually tacos.
What is the best thing about your job? Without a doubt it is my customers.
Do you have any back-of-the-bar advice? A clean bar is a happy bar, and remember you are here for service.
Can anyone be served at your bar? No, we only serve the guests of the Cove Inn and the members of the yacht club, but on Nov. 11 we are having a charity event at 6 p.m. that benefits Christmas for Children. We invite everyone to help us raise money to buy gifts for children in need. Last year we raised $42,000. We also sponsor tutoring programs at Lely Elementary and Calusa Park Elementary Schools every week.
Who would you like to have a drink with? My Dad, Bud Mallory. He was the best and would have ordered a VO (Seagram’s Canadian Whiskey) and water.
What was the last drink you had out? A Black Russian at Harold’s Place.
If you could be anything what would it be? I went to school for special education and psychology, and I always wanted to be a social worker. Working here I get to do both, especially with our charities and tutoring.
Did you ever serve a celebrity? Yes, Robert Ludlum was one of our members.
What is your most used utensil? My mouth. I talk to all my customers. It is just like a big family here.
When was the last time you had to look up a drink? It was a cold winter night and I tried to figure out how to make a Tom & Jerry.
Thomas gave us this recipe:
2 ounces Gold Cruzon Rum
1 ounce orange juice
½ ounce Orgeat syrup
Small splash of grenadine
Top off with Tom Collins mix
Bacardi Select black rum
* Fill a 12 ounce glass with ice.
* Add all the liquids except the black rum.
* Place a shaker on top of the glass and shake vigorously.
* Add the Barcadi Select. It will float on top.
