BONITA SPRINGS — Michele Baker is not only a baker by name, but by practice. She always made desserts for family and friends and they encouraged her to sell them so the rest of the world could enjoy her inventive flavors and artistic designs. She comes by her ingenious designs from her profession as an interior designer and found the perfect way to combine her love of baking and designing by starting her company Bellaboo Cakes. The name is for her 2-year-old daughter Isabella, and the company philosophy is to use organic and wholesome ingredients.
They’re sold at the Bonita Springs Farmer’s Market at the Promenade at Bonita Bay, 26841 S. Bay Drive, Bonita Springs from October to May. Baker says she can’t take all the credit for her success, because her buttercream recipe is from her Italian grandmother.
1½ cups organic confectioners sugar (the Wholesome brand, which tends to be fluffier)
½ cup organic unsalted butter
½ teaspoon vanilla extract
½ organic vanilla bean, sliced down the middle and with the beans scraped out
5 tablespoons organic heavy cream
■ In a medium bowl beat together the sugar and butter until blended.
■ Add the vanilla bean flesh and vanilla extract and blend.
■ Add the cream and mix until the consistency is stiff and suitable for spreading or piping.
