These latkes will make the happy holiday of Hanukkah a little bit sweeter for everyone.
SWEET POTATO LATKES (PANCAKES)
Makes 8 servings
Ingredients
2 1/2 pounds sweet potatoes, peeled and grated
6 tablespoons all-purpose flour
4 large eggs, lightly beaten
4 green onions, sliced
1/2 teaspoon, salt
Vegetable oil for frying
Preparation
Stir together the potatoes and flour and then stir in the eggs, green onions and salt and blend well.
Pour vegetable oil to about 1/2" depth into a large heavy skillet and heat to 350 degrees.
Drop potato mixture by tablespoonfuls into the hot oil.
Gently flatten latkes with the back of a spoon and fry in batches for three to four minutes on each side or until golden.
Drain on paper towels and serve or save covered and heat in the oven before serving.
May be served with sour cream and caviar, if you are kosher make sure the caviar is from salmon.
