In times past, the fry at casual dining spots was nearly uniformly a pile of salted spud lumber, cut straight, or with a crinkle cutter or in fatter, steakhouse wedges for variety.

Now the ubiquitous potato side offers wider a-peel as French fries, chips, shoestring, steak fries, wedges, curly, crinkle-cut, with the skin on or off, coated, seasoned, salted, thin or thick. You can even get sweet potato fries or “Tater Tots,” those little browned puffs of shredded spuds.

Fries are still usually served with ketchup, but now they can be topped with vinegar, cheese, mayonnaise, gravy or chili.
