Left to Right, Valentin Franco, Hugo Estrada and Roberto Perez work on making 5500 flour tortillas for the customers at La Fiesta # 3. The workers start at 3 in the morning and spend approximately ten hours making tortillas a day. La Fiesta #3 has become a central hub for the Immokalee community and a gathering place for farm workers who meet their transportation in the supermarket parking lot early in the mornings.
