Scott McIntyre/Staff Chef Leo Rubio plates a dish in the kitchen at Cosmos Cafe and Pizzeria in downtown Naples. Cosmos is one business that has flourished while many others close up shop. Since opening with 26 seats, Gianluca Corso has grown Cosmos to 85 seats, added a deli and bought the building where his businesses are.
